The leaves of Santoreggia, with a spicy flavor, are reminiscent of Thyme and are used to flavor soups and vegetable soups. Particularly suitable for cooking legumes, for flavoring sausages, fillings, cheeses and meat dishes and for preparing sauces and sauces.

It is part of the composition of the “Herbes de Provence”, together with thyme, rosemary and oregano.
