Tzatziki

Tzatziki (τζατζίκι (in greek) is a type of Greek appetizer also used as a sauce or side dish. The base includes the use of Greek yogurt, generally from sheep or goat, with grated cucumbers, garlic, vinegar or lemon, extra virgin olive oil, salt, pepper.

Other vegetables such as dill and mint can be added to these ingredients and they can change according to the typical tradition of the place where it is prepared or to personal taste.

Tzatziki one of the main components of the Greek souvlaki and gyros.

It is often served, accompanied by bread or pita, as the first course of a meal, with black olives.

Ingredients

2 medium cucumbers (hard and without big seeds)
400 g Greek yogurt (straghisto)
2 slices of garlic
1 tablespoon white wine vinegar (or lemon)
2 tablespoons extra virgin olive oil
Salt and Pepper (Ad Lib)

Extra

1 tablespoon of lemon in place of vinegar
1 pinch of dill
1 mint leaf
3 olives

Preparation

Take a small salad bowl and mix these ingredients in the quantities indicated: oil, vinegar, salt, pepper, crushed or chopped garlic obtaining an oily compound.

Wash the cucumbers well, removing both ends, grate it coarsely in a colander, squeezing it well to remove the vegetation water and put it in a bowl.

Add the mixture to the pulp of cucumbers and with a spoon make it homogeneous.

At this point add the yogurt mixing very well and leave at least 30 minutes to rest.
