The kaki or persimmon (Diospyros kaki L.f., 1782) (in Italian also diòspiro or diòspero) is a fruit tree: a dicotyledon angiosperm, belonging to the Ebenaceae family and to the Diospyros genus.

It is for fresh consumption.

The persimmon is about 272 kJ (65 kcal) per 100 g. It is made up of about 18% sugar, 78.20% water, 0.80% protein, 0.40% fat, as well as a fair amount of vitamin C and B vitamins. It is rich in beta-carotene and potassium. It has laxative and diuretic properties. If consumed unripe, the fruit is astringent due to the considerable amount of tannin.
